Quick and Easy Paleo Trail Mix

We often make a lot of large meals in bulk in order to get through the week with minimal cooking during the week—especially pulled pork, chili, and salmon. When it comes to snacks, we haven’t done much in terms of specific meals; instead, if we’re feeling peckish, we generally just have small portions of the other larger meals.

As often is the theme of late, my mom is always full of great recipes, and this one is no exception. We kept coming back to snack on this at my parent’s house. We even went through two servings of it over the course of 2 days during our last visit. This trail mix is a breeze to make, and will suit you well this summer for hiking, camping, and road trips!

Ingredients
1 C whole blanched almonds
1 C whole fancy cashews
1 C whole pecans
1 1/2 oz shelled pistachios
2 oz pepitos (raw natural pumpkin seeds)
1 C chopped walnuts
3/4 C unsweetened coconut, shredded (or 1/2 C coconut flakes)
4-6 oz raisins

Method

Quick and Easy Paleo Trail Mix Recipe

Use a meat tenderizer or heavy cup to break whole almonds, cashews, and pecans into smaller pieces in a gallon resizable bag, one cup at a time.

Once all nuts have been broken down, mix together all ingredients.
